Well the potato did cause 1 million Irish people to die of starvation and restructured culture in Ireland. Plus, it shaped the building of the Americas. Without the waves of Irish citizens coming in, cheap labor would have been cut in half and the industrialization of America would have halted. It’s such an easily planted and harvested crop, it practically built society. Latin American countries could never have had such large population booms without the food surpluses they got as a result of planting potatoes. I know this is a joke.. but the book does make sense.
